Cuadrat Valley Elixir Deshuesada Bio is an early-harvest organic extra virgin olive oil made exclusively from Arbequina olives. Coming from L’Albagés, in Lleida, it is protected by the Les Garrigues PDO and stands out for a unique production method that seeks to enhance the aromatic expression and character of this variety.
Unlike conventionally produced EVOO, the olives are pitted before milling, separating the pulp and skin from the whole pit. In this way, the oil is extracted solely from the olive pulp. The yield is particularly low: on average, about 12 kg of Arbequina olives are needed to produce one liter of Elixir Deshuesada.
Its intensity and complexity make it an EVOO especially suitable for enjoying raw and as a finishing touch for various dishes. It pairs especially well with salads, poultry, white fish, grilled vegetables, green beans, asparagus, pumpkin, and cheeses. Its profile is also very interesting with blue cheeses, whose intensity is balanced by the character of the oil, as well as with fresh and soft cheeses.
