LA Organic

LA Organic is a brand specializing in the production of organic extra virgin olive oil in Ronda, Málaga, in the heart of the Serranía de Ronda. The current project is driven by the Gómez de Baeza family, although the history of olive oil in these lands began much earlier. More than 200 years ago, a community of nuns in Ronda was already producing oil using olives from the area's centennial olive trees.

One of the fundamental places in this history is the La Amarilla estate, whose oil achieved significant fame among the inhabitants of Ronda for its quality. The Gómez de Baeza family, owners of La Amarilla, decided to continue that tradition and, during the 1990s, founded LA Organic, beginning a new stage focused on the production and marketing of high-quality organic extra virgin olive oil.

With the growth of the project, La Amarilla's own production was no longer enough to meet demand. LA Organic then developed a system inspired by the "pagos" (single-estate) concept from the wine world, working with Associated Estates that must meet their quality standards. In this way, the brand has managed to expand its production while maintaining a philosophy based on organic farming, fruit selection, and respect for its origin.

Currently, LA Organic combines the production of EVOO with a much broader project dedicated to promoting olive oil culture. Its bond with Ronda, its commitment to 100% organic production, and the combination of tradition and innovation have become the hallmarks of a brand that seeks to convey the Andalusian landscape and olive-growing culture in each of its oils.

Picual, Hojiblanca, Arbequina, and Picudo for producing organic EVOO

LA Organic works with different olive varieties to create oils with very distinct sensory profiles. Among the main ones are Picual, Hojiblanca, Arbequina, and Picudo, which are used both individually and combined in different proportions depending on the characteristics sought in each production.

An example is LA Organic Original Intenso, made with Picual, Hojiblanca, and Arbequina. The combination provides an oil of greater intensity, with aromas reminiscent of green tomato, apple, and green banana. At the more delicate end is Original Suave, made with Arbequina and Picudo, where a more harmonious, fresh, and fruity character is sought. The Picudo variety also features solo in LA Organic Oro, one of the house's most select editions.

The range is expanded with productions such as LA Organic Crianza, in which Picual, Hojiblanca, Arbequina, and Picudo from different Andalusian estates are combined. This diversity allows the brand to select the appropriate varieties and proportions depending on the type of oil it aims to achieve, from mild and balanced profiles to EVOO with greater intensity and aromatic complexity.

The organic philosophy is present throughout the entire process. LA Organic works with 100% organic olives, avoiding the use of fertilizers and synthetic chemical products. In its olive groves, harvesting is carried out following the traditional manual beating method and, once separated from the tree, the olives are transported without delay to the mill to begin their transformation.

The speed between the field and the mill is fundamental to preserve the characteristics of the fruit and reduce oxidation processes. Through this combination of organic farming, varietal selection, and care during harvesting and production, LA Organic seeks to obtain fresh and aromatic oils capable of maintaining a close relationship with the olives from which they come.

Centennial olive trees and organic farming in the Serranía de Ronda

The landscape of Ronda and its mountain range is a fundamental part of LA Organic's identity. Its olive trees have been a part of this inland Malaga terrain for generations, where the Mediterranean climate and unique topography create an agricultural environment very different from the vast olive groves of other areas in Andalusia.

The historic La Amarilla estate holds a particularly important place within the project. Its centenary olive trees represent the link between the current LA Organic and the oils that began to be produced in the area over two centuries ago. LA Organic Casa de Familia, made exclusively with organic olives grown at La Amarilla and produced in limited quantities, also comes from this estate.

The farm’s philosophy is 100% organic. The olive trees are grown naturally, and the estate integrates the olive grove into a more diverse agricultural landscape. The climatic conditions of the Serranía de Ronda allow for other crops to be found alongside the olive trees, such as aromatic plants, vineyards, lavender, citrus, quinces, and various plant species, creating an environment where biodiversity plays an important role.

This way of understanding the territory can be especially appreciated at LA Organic Experience, an estate located a few kilometers from Ronda, designed to introduce visitors to olive oil culture and organic farming. Within this landscape, there is also a 19th-century farmhouse surrounded by olive trees, vineyards, and lavender fields, with views toward the Serranía de Ronda and the Sierra de Grazalema.

For LA Organic, the olive grove is thus part of a much broader agricultural ecosystem. The centenary olive trees, the landscape of the Serranía, organic farming, and the plant diversity surrounding the estates help define a philosophy in which oil is not understood solely as a final product, but as the expression of a territory and an agricultural tradition that has remained alive for more than two centuries.
