Vindaro: the vinegar-making tradition of Haro in the heart of La Rioja

Vindaro is one of the leading brands of Vinagrerías de Haro, a family business specializing in the production and aging of wine vinegars in Haro, La Rioja. The company was established in 1995, although its working philosophy incorporates traditional vinegar-making knowledge and methods that have been passed down and refined over time.
Its location is no coincidence. Haro is one of the great historical centers of Spanish viticulture and is surrounded by some of the most renowned wineries and vineyards in La Rioja. Vinagrerías de Haro leverages this close relationship with the wine world to develop a different product: transforming selected wines into vinegars intended for gastronomy.
Among the company's various productions, Vindaro especially represents its commitment to aged and long-maturation vinegars. The range includes products with different aging periods, from vinegars aged for several years to exceptional creations that remain for decades, slowly evolving.
The company has facilities specifically designed to control the different phases of the process, from the acetification of the wine to the aging and subsequent bottling. Its cellar also houses hundreds of French oak Bordeaux barrels, which are essential for developing the aromas and complexity of its aged vinegars.
Vindaro thus transforms a product traditionally considered secondary into a gastronomic ingredient with its own identity, combining Rioja wine, natural fermentation, wood, and time.

Slow fermentation and long aging in French oak barrels

Vindaro's personality begins with its raw material: wine. From this, an acetification process develops in which acetic acid bacteria progressively transform alcohol into acetic acid in the presence of oxygen, giving rise to vinegar.
Vinagrerías de Haro is committed to a slow fermentation system using surface cultivation, moving away from industrial methods designed primarily to accelerate production. The goal is to carry out a progressive transformation that allows for the preservation and development of greater aromatic complexity.
One of the most unique elements of the process is the use of vine shoots from organic vineyards. These are prepared by forming bundles and are introduced into large fermentation tanks. The wine comes into contact with the vine shoots, which increase the surface area available for oxygenation and favor the natural development of the bacteria responsible for acetification.
Once this first transformation is complete, the so-called raw vinegar is obtained. For the highest quality references, this product is still far from finished. A second fundamental stage then begins: aging.
Vindaro vinegars destined for aging are moved to French oak Bordeaux barrels, where they evolve slowly. Depending on the product, the period can extend for five, ten, or many more years. Their offerings include Añejo-Crianza, Balsamic, and Gran Reserva vinegars, each defined by different maturation times and methods.
During this period, contact with the wood and the slow evolution of the vinegar allow for the development of greater complexity, the softening of certain sharp edges of acidity, and the contribution of aromatic nuances characteristic of long aging. The result is a product designed to be used in small quantities as a gastronomic ingredient in salads, vegetables, meats, fish, cheeses, sauces, and reductions.

Haro, Rioja wine, and a winery with hundreds of barrels

The territory of Vindaro is Haro, in La Rioja Alta, a town whose history is intimately linked to vine cultivation and winemaking. In this case, we are not talking about an olive grove estate as is the case with EVOO brands, but rather a project that finds its raw material and its identity in one of Spain's great wine-growing landscapes.
The abundance of vineyards and wineries in the area provides a particularly suitable context for a company specializing in vinegar. The starting point is Rioja wines, which go from being a finished product to becoming the raw material for a new fermentation.
The relationship with the vineyard goes even beyond the wine. The vine shoots, obtained after pruning the vines, also have a function within the particular production system used by Vinagrerías de Haro. In this way, an element traditionally considered a byproduct of the vineyard acquires a new utility within the acetification process.
Once the wine is transformed, the focus shifts to the aging cellar. Vinagrerías de Haro has around 500 French oak Bordeaux barrels, where the different batches can remain for years, evolving slowly. Time becomes one more ingredient in the product here.
This philosophy reaches its maximum expression in the very long-aged preparations, capable of remaining in wood for decades. In contrast to vinegars produced quickly for daily consumption, Vindaro bets on concentration, complexity, and prolonged aging in these references.
Thus, the identity of Vindaro is built around four closely related elements: Haro, Rioja wine, slow fermentation, and aging in French oak. A project that takes advantage of the enormous wine culture of La Rioja to produce vinegars with their own personality and a clear gastronomic focus.
