Cuadrat Valley Elixir Bio is an organic early-harvest extra virgin olive oil made exclusively from Arbequina olives. Produced in L’Albagés, in the Les Garrigues region (Lleida), it is protected by the Les Garrigues Protected Designation of Origin and represents a particularly intense and expressive interpretation of this variety.
The olives are harvested during the month of October, while they are still green, to preserve their aromas, flavors, and natural qualities as much as possible. After harvesting, a rapid, cold extraction process is used to obtain an organic EVOO with a distinct personality, characterized by an intensity rarely found in oils made from Arbequina olives.
On the nose, it presents an intense green fruitiness, with vegetal aromas reminiscent of fresh grass and green leaves, accompanied by notes of green almond, mint, and artichoke. On the palate, it exhibits a smooth and dense texture, with medium bitterness and balanced pungency. Its fresh and clean character gives way to a long and persistent finish.
Thanks to its aromatic profile and intensity, Elixir Bio is especially recommended for raw use to add personality to all kinds of dishes. It pairs particularly well with salads, toasted bread, oily fish, white meats, pesto pasta, soups, and vegetable risottos.
