The olives are harvested during the "envero"—the veraison stage—a key moment of ripening that allows for an oil with great balance and aromatic expression.
It presents a medium-intensityprofile, with soft notes of chlorophyll reminiscent of olive leaves and grass. Overall, it displays aromas of almond, fig tree, and citrus, while on the palate, it showcases the characteristic profile of the Picual variety with moderate bitterness and pungency, which are very well integrated. Its presence in the mouth is harmonious and persistent, evolving toward pleasant hints of ripe almond.
