O-Med Novo is an extra virgin olive oil produced by O-Med at their mill in Ácula, Granada. Its name refers to the character of "new" oil, linked to the beginning of the harvest season and the first olives gathered, when the fruit offers an especially fresh, aromatic, and vegetal expression.
Its production is focused on maximally preserving the qualities of the freshly harvested olive. The care taken from harvesting to extraction allows for an EVOO of great vibrancy, designed to convey those intense sensations that characterize new-harvest oils.
On the nose, it offers an expressive green fruitiness, with a predominance of herbaceous aromas and hints of leaf, tomato, and green fruit. On the palate, it shows a fresh and distinctive entry, followed by bitter and spicy sensations that provide structure and prolong the flavor. The overall result is intense, clean, and especially aromatic.
Due to its fresh character, O-Med Novo is an oil especially indicated for raw consumption. It can be enjoyed simply on bread or used to finish tomatoes, salads, vegetables, soups, and legumes. It also provides an interesting contrast to cheeses, fish, and meats, especially in recipes where you want the EVOO to take center stage.
